Chardonnay fruit was harvested in the early hours of the morning, loaded into the press cold, and gently separated from its skins. The very slightly cloudy juice was cold settled for a day and then racked. Fermentation took place in French Oak barriques, 35% of which were new. The wine was then left to mature in barrel on its lees for 10 months, with bâttonage occurring every 2 weeks.

Rich aromas of freshly cut peaches, jasmine, brioche, and roasted nuts, laced with finer nuances of white pear, cinnamon and nectarines. The entry is opulent and generous, coating, and textured, yet poised and balanced by finer white fruit tannin and succulent natural acidity. A fine and savoury finish leaves the palate quenched and yearning for more. Drink now for freshness or be rewarded with cellaring.

Following the Margaret River bushfires of 2011, the owners of Passel Estate provided refuge to a family (or Passel) of Western Ringtail Possums that had been displaced by the fires. The possums quickly adapted to their new surrounds and the sanctuary provided by the giant peppermint trees, (Agonis flexuosa). The original possum boxes that assisted in their release can be spotted throughout the property.

The owners have since installed two soft-release enclosures alongside the creekline, to enable the successful rehabilitation of more Western Ringtail Possums at the estate, working alongside local conservation groups and guided by the code of practice for wildlife rehabilitation in Western Australia. The soft-release enclosures enable the young possums to adjust safely to life in the sanctuary before being fully released.
